#1. Chicken Salad Sandwich
A sandwich may not seem like a meal for dinner, but you will love this recipe that is easy to make and nutritious as well. All you need is the following ingredients.
- Three Skinless, Boneless Chicken Breasts
- Six Sprigs of Dill
- One Chopped Green Apple
- Chopped Dill: 1 tablespoon
- Six Slices of Lemon
- Two Finely Chopped Celery Stalks
- Finely Chopped 1/2 Red Onion
- Mayonnaise: 2/3 cup
- Red Wine Vinegar: 2 tablespoons
- Dijon Mustard: ¼ cup
- Baguette
- Butter Lettuce
- Kosher Salt & Freshly Ground Black Pepper
Put the chicken in a single layer at the bottom of a large pot. Place the lemon slices on top along with the sprigs of dill. Cover with at least one inch of water and bring it to a boil. Reduce the heat and simmer until the chicken is cooked which should take about 10 minutes. Set aside for the time duration.
Place the mixture into a bowl and add the apple, celery, and onion. In a separate bowl, whisk together the Dijon, mayonnaise, and vinegar. Season the mixture with salt and pepper. Next, pour the dressing over the top of the chicken and toss. Now you can garnish with the chopped dill and serve in the baguette and lettuce.
#2. Ground Turkey Ragu
This is a great recipe for spaghetti that you and your family will love. Plus, it does not take that long to make. What follows are the ingredients you need for this meal.
- Spaghetti: 12 oz
- Ground Turkey: 1 lb.
- Two Garlic Cloves: Minced
- One Large Carrot
- Large Onion: Diced
- Can of Tomatoes: 28 oz
- White Wine: 1 cup
- Freshly Chopped Rosemary: 2 tablespoons
- Freshly Chopped Parsley and Freshly Grated Parmesan
- Kosher Salt & Freshly Ground Black Pepper
Boil a large pot of water and cook the spaghetti. Drain the pot when finished and keep the spaghetti inside. On the stove set for medium high heat, cook the garlic, carrot, and onion in a large skillet until tender. Then add the turkey and cook until it is golden which should take up to 7 minutes or so.
Add the crushed tomatoes, rosemary, and wine and cook for about five minutes. When ready, add in the spaghetti and garnish with the Parmesan and parsley. Season with salt and pepper.

- Wild Rice Noodles: 8 oz
- Peeled & Deveined Shrimp: 1 lb.
- Brown Sugar: 2 tablespoons
- Lime Juice: 2 tablespoons
- Fish Sauce: 1 tablespoon
- One Thinly Sliced Bell Pepper
- Two Cloves Garlic: Minced
- 2 Eggs: Lightly whisked
- Two Thinly Sliced Green Onions
- Roasted & Chopped Peanuts: ¼ cup
- Low-Sodium Soy Sauce: 1 tablespoon
- Cayenne Pepper: ¼ tablespoon
- Vegetable Oil: 2 tablespoons
- Kosher Salt & Freshly Ground Black Pepper
Cook the noodles in a large pot of boiling water until they reach al dente. Then drain the pot and let the noodles sit. Using a small bowl, whisk together the brown sugar, soy sauce, cayenne pepper, lime juice, and fish sauce and then set aside.
Using a large, non-stick pan over a medium-high heat stove, heat up the oil. Add the bell pepper and cook until it is tender which should take about four minutes. Then add in the garlic and cook for another minute. Add in the shrimp and season with the salt and cook until the shrimp is pink which takes about two minutes for each side.
Move the shrimp and vegetables to one side of the pan and add the egg to the other side and scramble them until they set. Then mix the scrambled egg with the shrimp and add the cooked noodles. Toss the mixture and add in the lime juice until it is all coated. Then, garnish with the roasted peanuts and add in the green onions before serving.
#4. Shrimp Scampi
One of the easiest meals to create, shrimp scampi requires the following ingredients.
- Spaghetti: 12 oz
- Peeled & Deveined Medium Shrimp: 1 lb.
- Three Cloves Garlic: Minced
- Crushed Red Pepper Flakes: 1 tablespoon
- Dry White Wine: 1 cup
- Butter: 3 tablespoons
- Lemon Juice from Two Lemons
- Zest of One Lemon
- Fresh Parsley
- Kosher Salt & Freshly Ground Black Pepper
Cook the spaghetti in a large pot of salted water according to the directions until it becomes al dente. Drain the water but keep about a ½ cup and return it to the pot.
In a large skillet over medium heat, melt the butter and add the garlic. Cook for about a minute, then add the shrimp and cook until it is pink. Add the red pepper flakes, lemon juice, and lemon zest, then season with the salt and pepper.

- Baby Spinach: 1/3 cup
- Pesto: ½ cup
- Crushed Red Pepper Flakes
If you do not have any flatbread, a thin pizza crust that has been cooked will do. Start by preheating the oven to 425 degrees F. Line or prep a baking sheet with a silicone baking mat or parchment paper. Spread the pesto over the flatbread, then top with the cheese, spinach, and some red pepper flakes.
Bake until the cheese bubbles which usually takes up to 12 minutes or so. Remove from the oven and slice it while it is still warm.

Who says you need ground beef to make a great burger? Turkey is an excellent meat to use in making a delicious burger that is lean and healthy. All you need is the following ingredients.
- Ground Turkey: 1 lb.
- One Large Egg: Beaten
- Worcestershire Sauce: 1 tablespoon
- Freshly Chopped Parsley: 2 tablespoons
- Two Cloves Garlic: Minced
- Extra Virgin Olive Oil: 1 tablespoon
- Kosher Salt & Freshly Ground Black Pepper
